Frugal Friendly Casserole Recipes

Casseroles are a great meal option. What I love about them is you can prep and freeze them for a quick meal on those busy days. They will definitely help to save you money on when you are so busy you are tempted to just grab takeout. 

I have put together a list of some delicious and frugal friendly casserole recipes that are  also kid friendly.

 

Cheesy Burrito Casserole

A classic Mexican-American dish transformed into an easy to make casserole. Your entire family will love the cheesy, beefy goodness that is this Cheesy Burrito Casserole.

Ingredients
  1. • 1 lb 90% Lean Ground Beef
  2. • 1/2 Medium Onion, diced small
  3. • 1 package (1.25oz) Taco Seasoning
  4. • 6 Flour Tortillas
  5. • 1 can (16oz) Refried Beans
  6. • 4 cups Shredded Mexican Cheese
  7. • 1 can (10.75oz) Condensed Cream of Mushroom Soup
  8. • 6 oz Sour Cream
Instructions
  1. • Preheat oven to 350°.
  2. • Brown ground beef and diced onions over medium heat in a large pan.
  3. • Add taco seasoning and stir in refried beans.
  4. • Mix together mushroom soup and sour cream in a bowl.
  5. • Spread half the sour cream mixture on the bottom of a 13″ x 9″ casserole dish.
  6. • Tear 3 flour tortillas into medium size pieces, and place them over the sour cream mixture.
  7. • Spread half the beef mixture over the tortillas.
  8. • Layer 2 cups of shredded Mexican cheese over the beef mixture.
  9. • Repeat the layers.
  10. • Bake uncovered in a preheated 350° oven for 25 minutes.
  11. • Remove casserole from the oven and allow to set 5-7 minutes before serving.
  12. • Optional: top with salsa or hot sauce.

Tetrazzini Casserole With Leftover Turkey Or Chicken
Serves 8
Here is a great recipe to make using leftovers!! We could call this Chicken Tetrazzini Casserole or Turkey Tetrazzini Casserole, but this easy recipe is really what you make of it! Whichever meat you choose, this dish is delicious, easy to cook and makes a TON of food!

Ingredients
  1. 4 Tbsp butter
  2. 4 cloves minced garlic
  3. 1 pound sliced mushrooms
  4. 1/2 tsp salt
  5. 1/2 tsp black pepper
  6. 1/4 cup flour
  7. 4 cups chicken broth
  8. 1 package cream cheese 8 oz (cut into cubes)
  9. 3 cups cooked chicken or turkey (cut into pieces)
  10. 1 1/2 cups frozen green peas/peas and carrots (your choice)
  11. 1/2 cup grated Parmesan
  12. 16 oz cooked spaghetti
  13. 1 cup bread crumbs, crushed plain potato chips or crushed Ritz crackers (your choice)
Instructions
  1. Heat your oven to 350 degrees.
  2. Cook your spaghetti and set it to the side.
  3. In a large pan on the stove, add butter, garlic, mushrooms, salt and pepper. Heat for a few minutes until mushrooms are dark in color and butter is melted.
  4. Add flour and stir until mixed.
  5. Add broth and cream cheese cubes and bring to a boil for about 10 minutes - until the cheese is melted.
  6. Add leftover chicken/turkey, peas and carrots.
  7. Stir and add more salt and pepper to taste.
  8. Remove from heat and stir in Parmesan cheese.
  9. Add cooked pasta and stir.
  10. Pour your mixture into a 9x13 casserole dish (or two smaller 8x8" casserole dishes if you want to save one for later) and spread evenly.
  11. Sprinkle with crushed bread crumbs/potato chips/Ritz Crackers and bake for 20 minutes until bubbly and heated through.
  12. Serve immediately.

Chicken Corn Chowder Casserole - One of my favorite Progresso® Light soups is Chicken Corn Chowder. I love it as a stand alone soup, and love it in this casserole. This is comfort food without the guilt of comfort food.

Ingredients
  1. 4 boneless chicken breasts
  2. 1 can Progresso® Light Chicken Corn Chowder soup
  3. ½ cup shredded pepper jack cheese
  4. 1 cup toasted cornbread crumbs (you can use either store bought cornbread, homemade or a cornbread mix)
  5. Salt
  6. Pepper
  7. Spray butter
Instructions
  1. Preheat oven to 350º F.
  2. Coarsely crumble cornbread and spread pieces in a large, shallow baking pan. Bake 12 minutes or until lightly browned, stirring once after 6 minutes. Set aside.
  3. Coat a casserole dish with non-stick cooking spray and add chicken breasts; season with salt and pepper. Lightly dust with flour so that toppings stick.
  4. Pour ¾ of the can of soup over chicken.
  5. Sprinkle cheese over chicken.
  6. Pour remaining soup on top of cheese to avoid cheese burning.
  7. Sprinkle cornbread crumbs on top (crush the pieces that are extra large as you sprinkle). Spritz crumbs with spray butter.
  8. Bake for minutes 45 minutes.

Ingredients
  1. 1lb ground turkey
  2. 2 Cans cream of chicken soup
  3. 1 soup can of milk
  4. Cheese (we used cheddar)
  5. Tator Tots
Instructions
  1. Preheat your oven to 350 degrees
  2. Spray a 9X13 dish with nonstick spray
  3. Brown your ground turkey and strain the grease
  4. Place browned turkey in bottom of casserole pan
  5. In a bowl mix together your cream soup and your milk
  6. Cover the ground turkey with the cream soup mixture
  7. Top with tater tots to so everything is covered
  8. Cover with cheese to your desired cheesiness
  9. Bake in the oven for about 30 minutes or till your tater tots are fully cooked and serve!!

Ingredients
  1. 1.5 lbs of ground beef
  2. 1 can cream of mushroom soup
  3. 1 can of corn
  4. 1 can of green beans (or equivalent fresh)
  5. salt and pepper to taste
  6. 4 servings of prepared boxed potatoes or 2-3 cups fresh mashed potatoes
  7. shredded cheese
  8. Optional
  9. other veggies to hide in (I often use finely chopped asparagus)
  10. 1/2 cup sour cream
Instructions
  1. mix together in baking dish: beef, soup, veggies, seasoning, and sour cream
  2. prepare mashed potatoes and layer on top of beef mixture
  3. sprinkle with cheese
  4. bake at 350 degrees for 30-40 min

Ingredients
  1. 1 head cabbage
  2. 3 lbs ricotta cheese
  3. 1 1/2 cups parmesan cheese grated
  4. 1/4 cup dried parsley optional
  5. 3 large eggs
  6. 2 pounds ground meat browned
  7. 40 ounces marinara sauce with no sugar added
  8. 32 ounces fresh mozzarella cheese sliced or shredded
  9. 1/4 cup parmesan grated (optional)
Instructions
  1. Carefully remove leaves from cabbage head.
  2. Parboil leaves in salted boiling water for 5-10 minutes. Drain and remove excess water with towel.
  3. Mix ricotta and parmesan cheese with eggs and parsley (if using). Set aside.
  4. Stir marinara sauce into browned meat.
  5. Spread about 3/4 cup sauce onto bottom of 11x15-inch baking pan.
  6. Place a layer of cooked cabbage leaves over sauce.
  7. Spread half ricotta cheese mixture over cabbage leaves.
  8. Top cheese mixture with half the remaining sauce.
  9. Cover sauce with half the mozzarella cheese.
  10. Repeat layers.
  11. Top off with additional parmesan cheese if desired.
  12. Bake 350F for about 25 minute
